Around our house Mexican food is a regular dish...but tacos and burritos can get old very quickly. So what can you do to mix it up a little? Make tortilla soup! The ingredients are basic Mexican food ingredients, so you will have most around the house which is always nice. If you like spicy foods, add more spice! I swear Kade has no taste buds so this is an easy recipe I can make spicy for him and mild for myself. Plus you gotta love any crockpot recipe...they are so easy!
The only changes I made were the following...
-Watch your chicken, mine cooked in an hour (just depends on size of chicken and crockpot)
-chicken broth instead of beer
-2 cans black beans instead of chili beans (just because I forgot them, but still tasted great)
-1 T chili powder
-1/4 tsp garlic powder
-1/4tsp onion powder
-1/4 dried oregano
-1 1/2 tsp cumin
-1/4 tsp. cayenne pepper (depending on how spicy you like it)
-dash salt & pepper
Really easy and you can throw in pretty much whatever you have around...Deelish!
